Before I share these awesome vegan Memorial Day recipes, I would like to take a moment and recognize the importance of Memorial Day, our fallen soldiers, and the families and friends they have left behind. Thank you for your service, for representing our nation, and for defending our freedom.

Watermelon Agua Fresca
This is a simple recipe, yet oh-so-satisfying! If only we didn’t drink it all up before we could snap a picture– yep, it’s that good!
Ingredients: 1/2 watermelon, 1 lime, handful basil
Instructions: Scoop out watermelon chunks and add to blender. Do not add seeds or the rind to the blender. Blend 1/2 of the watermelon until it is liquified (about 30 seconds). Add the juice from one lime to the blender and blend again (5 seconds). “Muddle” basil at the bottom of each glass and pour watermelon/lime juice over muddled basil. Adjust according to taste.
